New Product: Dark Chocolate Acai w/ Blueberry

I wandered to Costco after getting my hair cut.  Between grabbing a pie and some pizza I found Dark Chocolate Acai w/ Blueberry.  It's a delicious chocolate treat loaded with antioxidants.  I love it!

Heading to Pudding on the Rice, Favorite Spot for Flavored Rice Pudding

Heading to one of my favorite dessert spots this week, Pudding on the Rice.  They have excellent sweet & savory crepes, but are famous for their Rice Pudding which comes in a variety of flavors.  Yum!

Mojo Crepes - Delicious Desserts in SE Portland

A friend and I headed over to Mojo Crepes, a place highly recommended by others.  It's run by two recent college graduates and since they are Asian we thought we would go and support our people.  :)

I had the Classic which was filled with Nutella, Bananas and Strawberries.  The Crepe was done perfectly and it was delicious.  My friend had an Ice Cream Crepe, called a Tokyo Sundae, which was filled with Ice Cream, Sweetened Red Bean Paste (Azuki), Mangos and Matcha Sauce.  The Tokyo Sundae was large and a bit hard to eat in the cone form, but he enjoyed it greatly.

The location is on 8409 SE Division Street and look for street parking once you are near by.  The prices are super reasonable so it is worth the trip.  Check them out!

Recipe: Pistachio Ice Cream Dessert

Here's a dessert I make every now and then that everyone loves.  People always ask me to make it so I thought I would share the recipe.

Pistachio Ice Cream Dessert

2 pkg. (3oz) pistachio pudding
1 1/4 cup water
1/2 gallon vanilla ice cream, softened
36 Ritz Crackers
1/3 cup butter melted
1 tub 4 oz. Cool Whip
3 Heath Toffee Bars

Crush crackers and mix with butter and press down into a 9X13 pan
(I sometimes add more crackers and butter for a thicker crust)
Bake 350 degrees for 10 minutes. 
Let Cool.

Beat pudding & water together for 2 minutes
Add softened ice cream and mix together
Pour mixture onto crust and spread evenly
Allow to freeze.

Top dessert with Cool Whip and top Cool Whip with crushed Heath Bar

Cut & Serve!

Kinder Chocolate, A Friend's Recommendation

I was at World Market with a friend and one of his 'must buys' was Kinder Chocolate.


It is hard to convince me that there is any great chocolate out there I haven't tried, but I was surprised by this one.  It was sweeter then most, very rich, and very satisfying.  It was 3 dollars for a box of 8 tiny bars.  Definitely not cheap, but would make a great party favor, stocking stuffer or little something to accompany a "Thank You" Card.  Try it!  I think any chocolate lover would be satisfied.

Trader Joe's Canned Crab Meat (Chicken of the Sea)

New Product! 

A while ago my mother and I were shopping at Trader Joe's and bought the store brand crab meat.  She had bought it to take back to Hawaii since a friend of hers had told her it was delicious.  As we were checking out the sales associate told us about the Chicken of the Sea Canned Crab they carried in the refrigerated section.  She thought that was the best.  I made a mental note to try that one day and I finally did.

Yesterday I opened the canned crab and there wasn't any liquid to drain so there really was a ton of meat!  Which is good since the can runs around eight dollars.  I simply mixed the crab meat with mayonnaise and black pepper.  I put this in a sandwich with lettuce and Swiss cheese and it was yummy!  It yielded about five sandwiches so even though the crab meat wasn't cheap it wasn't too bad for five sandwiches.

There is a recipe on the can for crab cakes that I hope to try next.
